Abstract [eng] The most common cause of health disorders is inappropriate lifestyle and eating habits, which shorten the longevity of society, accelerating the aging process and creating health challenges. Due to the very fast and active pace of life and the penetration of industrially processed food into the public diet, fast, processed food preparation methods are increasingly being chosen, which lead to changes in eating habits that lead to nutrient imbalances. High-calorie, fatty, high-refined sugar and salt foods, as well as low-fiber and other micronutrient-containing foods, increasingly dominate the public's diet, creating an imbalance in them. The purpose of the study is to evaluate the consumption of fiber substances in older and elderly people. Research tasks: 1. To evaluate the nutritional characteristics of older and elderly people; 2. To determine the respondents' knowledge about the sources of fibrous materials; 3. To evaluate the consumption of products containing fibrous substances. Research material and methods. The public survey was conducted in 2023. questionnaire by means of an online survey. A total of 81 adult residents' knowledge, eating habits and dietary fiber consumption habits were investigated and evaluated. Statistical data were calculated using the "Microsoft Excel for Mac 2021" program and the comparative analysis was performed using the epidemiological research calculator "Winpepi version 11.65". The statistical significance of the differences in the results was determined according to the χ2 (chi-square) criterion. The difference in results is considered significant when p ≤ 0.05. Research results. After analyzing scientific articles, it was established that the consumption of dietary fiber has indisputable health benefits, but according to the study, we see that although over 70% respondents have sufficient knowledge about the sources of fiber materials, but 67 percent. older and elderly people have inappropriate eating habits are overweight or obese. Vegetables are consumed every day or several times a day by 56.8 %, fruits by 44.4 %, grain products - 33.3 % respondents. Conclusions. After evaluating the knowledge and nutritional characteristics of older and elderly people, it was found that the respondents have enough information about where fiber substances are found, but their diet lacks foods containing fiber substances, so the respondents consume only 13 g/day of dietary fiber.
