The dairy sector is one of the most complex branches of the economy, which has a particularly important role in ensuring that only safe and high-quality dairy raw materials (products or semi-finished products) reach consumers. The quality of dairy products, especially it’s safety, is the most important task of the modern food industry. The selection of high-quality raw materials of milk origin depends on the identification and presentation of the correct qualitative and quantitative criteria to future suppliers (producers) of raw materials of milk origin. Choosing the right criteria based on their importance to the quality of the final product is a rather difficult task in the dairy industry. Scientific problem – the influence of supplier selection criteria and the appropriate selection of supplier selection criteria is a rather difficult task in the dairy industry. There is a lack of empirical research on how supplier selection criteria and their appropriate ranking influence the quality of milk-derived raw materials. The aim of the master’s thesis: based on the results of the literature analysis and the conducted survey, find out what influence the application of supplier selection criteria has on the quality of raw materials of milk origin. The object of the master’s thesis: The influence of the application of supplier selection criteria on the quality of raw materials of milk origin. Tasks of the master’s thesis: Identify the supplier selection criteria that have the strongest influence on the quality of raw materials of milk origin; to define the concept of quality of raw materials of milk origin and the structure of quality criteria; based on the results of the exploratory research, prepare and conduct a survey of specialists who produce and supply milk-based raw materials to customers in order to find out whether the selected supplier selection criteria influence the quality of milk-based raw materials. Research methods: theoretical review of scientific literature; quantitative research (questionnaire). Initially, an exploratory study is carried out to select the main relevant criteria for the selection of suppliers, which influence the quality of raw materials of milk origin. The priority of the criteria is determined according to the expert survey questionnaire. After the exploratory research, a questionnaire is drawn up, a quantitative study is carried out to determine the impact of supplier selection criteria on the quality of raw materials of milk origin; statistical data analysis (SPSS). The first chapter of the master’s degree examines the literature on the topics of supply chain, supplier selection and supplier selection criteria. The second chapter examines the concept of quality of raw materials of milk origin and the structure of quality criteria. In the third chapter, an exploratory study is conducted, the results of which are used as a basis for the main study. In the fourth chapter, an empirical study is carried out with the aim of determining the influence of the application of supplier selection criteria on the quality of raw materials of milk origin. A survey of specialists (experts) working in the dairy industry sector was carried out, which was carried out by apklausa.lt. The formulated hypotheses were tested in the Master’s thesis. After the empirical study, all hypotheses were accepted, i.e. it was found that selected supplier selection criteria influence the quality of dairy products. After the research, conclusions and recommendations were presented. Key words: Criteria, quality, supplier, customer, raw materials of milk origin. |
