Abstract [eng] The study is devoted to the improvement of the accuracy of the estimation method of fancy bread quality. The object of investigation - wafer sheets produced according to the production method and formulation applied in the Austrian company "Manner". While optimizing the process, the acoustically analyzed wafer sheets were prepared in four different ovens, namely SWP, SNL, NAP and MIG. [...].
