Abstract [eng] This master's thesis examines the aspects of restaurant culture and trends during the post-Soviet period in Siauliai. The argument of this written work is reflected by the questions: What are the characteristics of today’s restaurant culture in Siauliai? Which of its features are the most prominent? Which culture trends from the post-Soviet period are seen the most in the context of today’s restaurants in Siauliai city? The aim of this master’s thesis is to reveal the culture of Siauliai’s city restaurants and outline its development trends in the post-Soviet period. Theoretical part of this master's thesis firstly analyses theoretical aspects of the restaurant culture (it explains the definition of the cultural concept, and then later discusses about more interesting restaurant cultural highlights (more interesting concepts around the world and in Lithuania)). After the contextual evaluation of the restaurant culture, the focus moves onto the analysis of Siauliai’s city restaurant culture: the discussion takes place about the culture of the currently operating restaurants and their peculiarities of different time periods; it also demonstrates the essential characteristics in this city’s restaurant cultures in post-Soviet period. The empirical part of this master's thesis provides the analysis of the information about this field’s specialists - managers and other employees, from the currently operating restaurants, which was acquired in an interview. Obtained information during the interview enabled the analysis of currently operating restaurant cultures in Siauliai city and anticipation about these culture trends. The study found that the main restaurant culture trends in the post-Soviet period are as follows: an appearance of an interactive restaurants and coffee shops, which provide take-away coffee. In some restaurants customers can not only eat, but also read books , newspapers , flip over art albums, listen to the music, chat (arba communicate), etc. In order to attract clientele, today’s restaurants are implementing various research projects, arranging other events, fit for various age groups. Most of the operating restaurants in Siauliai are pleased to organize joint projects with local inventors, carefully analyze and assess customers’ wishes and requirements, themselves seek to improve their working conditions. Prospects of restaurant cultures are positive. Efforts will be made to organize various events for young people and the elderly. Some menu innovations are also going to appear, a lot of attention will be dedicated to vegetarian nutrition, variety of non-alcoholic drinks, etc. Strengthened security and strict staff management will ensure better customer service.
